Its not that hard and easiest to do in the bike as you can see the offset etc. The only rims I have had an issue with were Italian rims as they were not lined up correctly when they welded them, give it a go. Worst case scenario you have to pay someone to fix the mess you made.

I've actually done several myself. Some just fall together and others are a right royal P.I.A. :$ .

Have the correct rim, correct spokes and the correct attitude :-| and they go together easy. But a little out of shape and..........

But this vid has some good tips, but spoking is mainly patience and being methodical. And that's what they depict. Give it a go. Spokes are Koool ;) .

Here is one that master machinist Dave Fenner knocked up out of scrap. It will do axial/radial run out as well as offset all in one go, and cost less than $20

For some time I've been thinking of doing a re-spoking as per photo 12.

I receive some new spokes yesterday for a project so this might be my chance. As I said if you can get the concentric and the run out about right, they fall together.
